Ingredints:

  • Green chilis: 4 oz diced
  • Pimientos: 2 oz diced, drained
  • Pre-cooked white rice: 3 cups

Procedure:

Ingredients:

  • Chicken breast, large, cut into strips: 1
  • Buttermilk: 4 tablespoons
  • Pesto: 1 teaspoon
  • Clove garlic, crushed: 1

  • Couscous: 150g
  • Boiling chicken stock: 200ml

  • Skinless salmon fillet: 6 (125g each)
  • Marinade -
  • Soy sauce: 2 tablespoons
  • Sesame oil: 2 teaspoons

  • Runny honey: 2 teaspoons
  • Garnish -
  • Fresh chopped coriander: 1 tablespoon
  • Spring onions, shredded:

Procedure:

  1. Combine marinade ingredients in a non-metallic bowl and stir well.
  2. Coat fillets in marinade and allow flavor to infuse.
  3. Cook for 3 – 4 minutes on each side over medium heat. Brush with remaining marinade from time to time.
  4. Scatter coriander and spring onions over fillets and serve.
